Weekly Special: Caramelized Onion Focaccia


This week, we are tapping into two highly proven ways to extract flavor using the simple benefit of time: fermentation (for our dough, as usual!) and caramelization, for the onions that wonderfully flavor our caramelized onion focaccia. 

Using our traditional focaccia recipe as a base, we then add onions, properly caramelized for roughly 45 minutes, and let the dough and the onions ferment together, allowing the flavor and aroma of the golden brown onions to infuse the dough. The finishing touch: a few caramelized onions  and a dash of salt to top it, et voila!

We shape these loaves in rustic free-form, so each will be slightly different. Loaves are just over 1 pound with a crisp crust and tender crumb.
