The way I was introduced to pita, it was almost inevitable that I would love it. I was in Cairo as a young boy visiting my grandparents when I tried it for the first time, fresh out of a hot oven that filled the street with the most wonderful aroma. 

I've been experimenting with my pita recipe in search of that fragrant first bite I remember from so many years ago. I've landed on a blend of durum, spelt, wheat, and bread flour, combined with a natural starter, yielding soft, billowy loaves that I hope you'll enjoy.

They'll stay fresh for 2-3 days in a sealed bag or box. Otherwise, freeze immediately and enjoy for the next few weeks.
