Weekly Special: Walnut, Roquefort, and Honey Boule

This week's special is a walnut, roquefort, and honey sourdough boule.  We start with our rustic sourdough boule and pack it with walnuts, roquefort cheese, and a touch of honey to round out the bold flavor of this boule.  As usual, we bake this to a rich and deep crust. 

The inspiration for this special?  When I was working in the bakery in Paris, there were 3 of us who worked the morning shift and we experimented with different loaves, where we'd each pick an ingredient to incorporate into a particular dough.  This week's special was our favorite combination and an homage to the bakers who patiently helped me hone the craft in the early morning hours in the basement of a Parisian Boulangerie.
